Ground Turkey & Marinara Stuffed Zucchini Boats
Ingredients
- 4-5 zucchini
- 1 Tbsp. Olive Oil
- 1 lb. Ground turkey
- 1 tsp. or 1-2 cloves garlic, minced
- ½ cup onion, diced
- ½ cup mushrooms, diced
- 24 oz jar of marinara sauce
- 1 Tbsp. Italian seasoning
- ½ cup shredded mozzarella cheese
- Pepper to taste
Instructions
- Preheat your oven to 400℉. Line a baking sheet with foil and set aside.
- Cut the ends off the zucchini and cut in half lengthwise. Hollow out the center of each zucchini half using a spoon. Roughly chop the flesh you removed from the zucchini and set aside. Place zucchini on the baking sheet, cut side up.
- In a skillet, heat olive oil over medium heat. Add onions and mushrooms. Sauté for a few minutes, until onions become translucent. Add minced garlic and the flesh you removed from the zucchini, sauté another 2-3 minutes.
- Add ground turkey to onion/mushroom mixture. Sauté until browned and evenly cooked through.
- Add marinara sauce to ground turkey mixture along with Italian seasoning and pepper. Mix thoroughly and remove from heat.
- Fill the zucchini boats evenly with turkey/marinara mixture. Bake for 25 minutes.
- Remove from oven and top each boat with shredded mozzarella cheese. Bake for an additional 5 minutes or until cheese is melted.
**Notes: serve with a side of your favorite pasta or whole grain! You can also use the turkey/marinara sauce to go over pasta if you don’t have zucchini on hand.
