Veggie Greek Salad
Ingredients
For the Veggies:
- 2 seedless cucumbers, diced
- 10 oz. package of grape tomatoes, quartered
- 1 red or yellow bell pepper, diced
- ½ red onion, thinly sliced
For the Dressing:
- 2 Tbsp. olive oil
- 4 Tbsp. balsamic vinegar
- 1 tsp. dried oregano
- 1 tsp. Italian seasoning
- ¼ tsp. salt
- ½ tsp. black pepper
- 4 oz. feta cheese
Instructions
- Combine all vegetables in a bowl.
- In a separate container, add all ingredients for the dressing except feta cheese. Use a whisk or a fork to mix well.
- Pour the dressing over veggies and mix to evenly coat. Sprinkle feta cheese on top. Serve immediately.
**Notes: Can substitute low-fat mozzarella pearls instead of feta cheese.
