Veggie Greek Salad

Ingredients

 For the Veggies:

  • 2 seedless cucumbers, diced
  • 10 oz. package of grape tomatoes, quartered
  • 1 red or yellow bell pepper, diced
  • ½ red onion, thinly sliced

For the Dressing:

  • 2 Tbsp. olive oil
  • 4 Tbsp. balsamic vinegar
  • 1 tsp. dried oregano
  • 1 tsp. Italian seasoning
  • ¼ tsp. salt
  • ½ tsp. black pepper
  • 4 oz. feta cheese

Instructions

  1. Combine all vegetables in a bowl. 
  2. In a separate container, add all ingredients for the dressing except feta cheese. Use a whisk or a fork to mix well.
  3. Pour the dressing over veggies and mix to evenly coat. Sprinkle feta cheese on top. Serve immediately.

**Notes: Can substitute low-fat mozzarella pearls instead of feta cheese.
