Sweet Potato, Chickpea, and Lentil Soup
Ingredients
- 2 tablespoons olive oil
- 1 can chickpeas (drained)
- 1 onion (finely diced)
- 3 garlic cloves (minced)
- 2 teaspoon ginger
- 1 teaspoon Salt
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 can fire roasted tomatoes
- 2 large sweet potatoes (peeled and cut into small cubes)
- 1 can lentils (drained and rinsed)
- 5 cups low sodium vegetable broth
- Lemon juice to taste
- Cilantro (finely chopped)
Toppings:
- Sunflower seeds
- Pumpkin seeds
- Pepper
- Red pepper flakes
- Cilantro
Instructions
- Heat oil and add onion, garlic, and ginger (cook for about 5 minutes)
- Add spices, fire roasted tomatoes, sweet potatoes, lentils, chickpeas, and broth. Stir.
- Add lemon juice and chopped cilantro.
- Simmer for 25-30 minutes.
- Add toppings and enjoy!
