Super Simple Slow Cooker Chicken
If meal planning and cooking during your busy week seems nearly impossible, this is the recipe for you. It starts with chicken breasts, broth, and a slow cooker and the end result is tender, shredded chicken that can be used for meals throughout the week!
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1/2 cup reduced sodium chicken broth or water
Instructions
Make a wrap: Spread your favorite hummus on a whole wheat tortilla and top with the chicken and some spinach or lettuce.
Make tacos: Add taco seasoning and salsa to the chicken and serve in a corn tortilla with lettuce, tomatoes, and your favorite taco toppings.
Make a pizza: Top a thin pre-made pizza crust with BBQ sauce, chicken, veggies, and shredded cheese.
Make soup: Start with chicken broth and add chicken, mixed vegetables, pasta or beans. Season with your favorite herbs and spices.
Make a salad: Top a bed of spinach or Romaine lettuce with chicken, strawberries, pecans, and Feta cheese.
