Stuffed Pepper Soup
Ingredients
- 1 pound lean ground turkey (93% lean)
- 1 medium onion, chopped
- 2 medium green peppers, chopped
- 2 cups cooked brown rice or 1 package (8.8 ounces) ready-to-serve brown rice
- 1 teaspoon Italian seasoning
- 2 cans (15 ounces each) tomato sauce
- 2 cans (14.5 ounces each) diced tomatoes, undrained
- 1 carton (32 ounces) low-sodium beef broth
Instructions
- Cook turkey in a skillet until evenly brown. Stir in onion, and cook until tender.
- Transfer turkey to a slow cooker and add remaining ingredients.
- Cook, covered, on low for 5-6 hours.
