Slow Cooker Quinoa Chili
This meatless chili is packed with protein and fiber making it a hearty and satisfying dish.
Ingredients
- 2 (14.5 ounce) cans of diced tomatoes
- 2 (15 ounce) can of black beans, rinsed and drained
- 2 (15 ounce) can of pinto beans, rinsed and drained
- 2 cups frozen corn
- 3 cups vegetable broth
- 1 cup of quinoa, rinsed
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 2 teaspoons cumin
- 1/2 teaspoon red pepper flakes
- 2 teaspoons chili powder
