Roasted Chickpeas
Chickpeas (also known as garbanzo beans) are a source of healthy plant-based protein and they’re packed with fiber. Roasting chickpeas transforms them into a crunchy snack that can be flavored to your liking. Not only is this recipe adaptable to your tastes but it’s really quick and easy to make!

Ingredients
- 1 15 ounce can of garbanzo beans, drained and rinsed
- 1 tablespoon canola or grapeseed oil
- 1/4 teaspoon salt (optional)
Seasoning options:
- Ranch - 1/2 teaspoon thyme, 1 teaspoon dried minced onion, 1 teaspoon dried dill, 1/2 teaspoon garlic powder, 1/2 teaspoon pepper
- Taco - 1 tablespoon of taco seasoning
- Cinnamon - 2 teaspoons cinnamon, 1 tablespoon sugar
- Chocolate - 2 tablespoons maple syrup, 3 tablespoons cocoa powder, 1/2 teaspoon vanilla
Instructions
1. Preheat oven to 400 degrees F.
2. Drain and rinse the chickpeas and pat dry with a paper towel.
3. Drizzle oil over a baking sheet. Pour chickpeas on the baking sheet and toss in the oil to coat.
4. Bake for 30-45 minutes, stirring or shaking every 15 minutes.
5. Remove from the oven when the chickpeas are crunchy. Combine the spices and flavorings of your choice (see ideas above) in a medium sized bowl. Toss the chickpeas in the spices/flavorings to coat.
6. Return to the oven and roast for another 5 minutes.
7. Store in an airtight container for up to 2 days.
