Pear Salad
This beautiful salad is the perfect addition to any party or holiday menu.
Ingredients
For the salad:
- 3 medium pears, sliced
- 2 tablespoons lemon juice
- 16 ounces salad greens
- Seeds from 1 large pomegranate
- 8 ounces Brie, sliced and cut into 1- inch pieces
- 1 1/2 cups pecan halves, toasted**
For the dressing:
- 2/3 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- ground black pepper, to taste
Instructions
- Cut the pear slices and place them in a large plastic bag and squeeze lemon juice over them. Gently shake the bag to coat. In a large salad bowl, combine salad greens, pears, pomegranate seeds, Brie and toasted pecans. Right before serving, drizzle with dressing and toss until ingredients are coated.
- To prepare the dressing, measure all of the ingredients into a bowl or jar with a tight lid. Shake until everything is thoroughly mixed.
- To toast pecans, preheat the oven to 350 degrees. Spread pecans on baking sheet and bake for 8 to 10 minutes, stirring every 2-3 minutes in between. Allow to cool before adding to the salad.
