Pasta Primavera

This dish pairs nicely with lean grilled chicken. Add chickpeas or black beans for a meatless meal. Other vegetables that would work in this recipe include zucchini, squash, mushrooms, and sugar peas.

Ingredients
- 10 oz. dry whole wheat pasta of your choice
- 1 Tbsp. olive oil
- ½ medium onion, sliced
- 1 large carrot, peeled and sliced into matchsticks
- 2 cups of broccoli florets, sliced into matchsticks
- 2 medium red or orange bell peppers, sliced into matchsticks
- 2 tsp. minced garlic
- 1 cup grape tomatoes, halved
- 1 Tbsp. Italian seasoning
- 2 Tbsp. lemon juice
- ½ cup shredded parmesan
Instructions
- Bring a large pot of water to a boil. Cook pasta according to package directions until tender.
- While pasta is cooking, heat olive oil in a skillet over medium-high heat.
- Add red onion and carrots. Sauté for 3 minutes.
- Add broccoli and bell pepper. Sauté for 2-3 minutes.
- Add garlic, tomatoes, and Italian seasoning. Sauté for 3 more minutes until veggies are tender and easily pierced with a fork.
- Remove veggies from heat and pour into serving bowl. Drain pasta and add to the serving bowl with veggies. Drizzle with lemon juice and sprinkle with parmesan cheese.
