Pasta Primavera

Pasta Primavera

This dish pairs nicely with lean grilled chicken. Add chickpeas or black beans for a meatless meal. Other vegetables that would work in this recipe include zucchini, squash, mushrooms, and sugar peas.

Ingredients

  • 10 oz. dry whole wheat pasta of your choice
  • 1 Tbsp. olive oil
  • ½ medium onion, sliced
  • 1 large carrot, peeled and sliced into matchsticks
  • 2 cups of broccoli florets, sliced into matchsticks
  • 2 medium red or orange bell peppers, sliced into matchsticks
  • 2 tsp. minced garlic
  • 1 cup grape tomatoes, halved
  • 1 Tbsp. Italian seasoning
  • 2 Tbsp. lemon juice
  • ½ cup shredded parmesan

Instructions

  1. Bring a large pot of water to a boil. Cook pasta according to package directions until tender.
  2. While pasta is cooking, heat olive oil in a skillet over medium-high heat.
  3. Add red onion and carrots. Sauté for 3 minutes.
  4. Add broccoli and bell pepper. Sauté for 2-3 minutes.   
  5. Add garlic, tomatoes, and Italian seasoning. Sauté for 3 more minutes until veggies are tender and easily pierced with a fork.
  6. Remove veggies from heat and pour into serving bowl. Drain pasta and add to the serving bowl with veggies. Drizzle with lemon juice and sprinkle with parmesan cheese.
