Baked Fish with Rainbow Salsa

Baked Fish

Ingredients

Fish:

  • 4 4-ounce fillets of fish, fresh or thawed
  • 1 teaspoon paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons olive oil

Salsa:

  • 1/2 cup diced pineapple, fresh
  • 1/4 cup diced green onion
  • 1/2 cup diced bell peppers
  • 1/2 cup diced ripe tomatoes
  • 1 Tablespoon lime juice
  • 1 diced jalapeno (optional)
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 350°F.
  2. Place the fish fillets on a baking pan so they are spread evenly apart.
  3. Sprinkle the tops of the fish with the paprika, onion and garlic powder mixture. Bake until the fish is done - when it flakes apart and is fork tender, about 15-20 minutes.
  4. Meanwhile, place the ingredients for the salsa in a medium-sized bowl and mix well. Serve each fillet of fish with 1/2 cup of salsa on each. Can also place fish on a bed of fresh spinach or sauteed kale!
